Turkey & Rice Taco Salad

1 pound ground turkey

2 teaspoons onion powder

1 clove garlic, minced

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon cumin

¼ teaspoon black pepper

¼ cup tomato puree

½ cup vegetable or chicken broth

2 cups cooked brown rice

2 romaine hearts, shredded

¾ cup sliced grape tomatoes

½ cup cheddar cheese, shredded

tortilla chips

favorite salsa

1 large avocado, peeled , seeded, diced - optional

¼ cup sour cream – optional


In medium to large skillet heat olive oil over medium high heat, saute garlic, cook until soft but not brown. Add ground turkey, stirring to crumble, cook until done, drain fat if any. Add salt, cumin, black pepper, tomato puree, brown rice, vegetable broth and onion powder. Stir to incorporate ingredients, remove from heat to cool.

Place medium mound of lettuce in middle of a plate or bowl arrange tortilla chips around lettuce. Place 2/3 cup meat mixture on top of lettuce, garnish with cheese, grape tomatoes, optional ingredients and salsa.


Instead of onion powder diced fresh onions could be sauteed with the garlic.

Bean & Rice Taco Salad

1 can red beans

1 can pinto beans

½ cup diced onion

1/3 cup diced green or red bell pepper

1 clove garlic, minced

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon cumin

¼ teaspoon black pepper

¼ cup tomato puree

½ cup vegetable broth

2 cups cooked brown rice

2 romaine hearts, shredded

¾ cup sliced grape tomatoes

favorite salsa

favorite tortilla chips - optional

1 large avocado, peeled , seeded, diced - optional

A vegan or vegetarian cheese may be added to taste.
